Paul Roux opened La Colombe d'Or as a hotel-restaurant in 1931, with just three rooms. It holds works by Picasso, Matisse, Miró, Modigliani, Braque, Fernand Léger, Utrillo, Chagall and Ben, and painters, actors and singers have passed through it for decades; Simone Signoret married Yves Montand here in 1951.
